01/23/2023 “Sheet Pan Sausage and Pepper Hoagies” By Kaylee McGrath

This easy sheet pan dish is perfect when you’re in a hurry to make dinner or having guests over for an informal lunch or dinner. Also, perfect to serve while watching a football, baseball, hockey game, etc. on TV. You can serve it with various chips and dips, salads, or even a baked cheesy potato casserole. Feel free to use either sweet or hot pork sausage, chicken, or turkey sausage.


YIELDS:

4 - 6 serving(s)


Ingredients

3 bell peppers (red, yellow and/or orange), cut into large chunks

2 red onions, trimmed and cut into quarters

3 tbsp. olive oil

1 tsp. dried sage

1 tsp. kosher salt

Black pepper, to taste

12 Italian sausages

4 to 6 hoagie, sub, or torpedo rolls (optional to toast the roll)


Directions

1. Preheat the oven to 425˚

2. Spread the peppers and onions on a baking sheet

3. Drizzle with the olive oil, sprinkle with the sage, salt and some pepper and toss, breaking up the onions a bit as you do

4. Put the sausages in and around the vegetables on the baking sheet

5. Bake until the sausages are cooked through and the vegetables are tender, 30 to 35 minutes.

6. Slice the sausages and serve on rolls with the roasted vegetables


Suggestion for Dessert: Rich Chocolate Cake with Chocolate Cream Cheese Frosting or Creamy Vanilla Custard Fruit Tart (store bought is perfect, no worries)
