03/01/2021 “Easy Chicken Crockpot Recipes” By - Kaylee McGrath

As mentioned previously at a recent Women’s Group that I Co-host, as well as past articles I have shared in 2020, I’m learning how to cook slowly but surely with my mother teaching me. Back in early January of this year, it was fun to share some of the very easy meals that I’ve been able to prepare on my own using a George Foreman Grill. This week I would like to offer two great EASY chicken recipes that even I can do (with limited help) using a crockpot. I know these recipes will come in handy with some of my readers who have physical disabilities that have difficulty using an oven or a stovetop.


Easy Creamy Chicken and Veggies

2 Boneless Chicken Breasts (for two servings)

Cut cleaned and trimmed boneless chicken breast into medium size pieces

1 can of Campbells cream of chicken soup or cream of mushroom soup

Sprinkle Salt and Pepper to your taste on the chicken pieces

Sprinkle onion and garlic powder to your taste on the chicken pieces

4 teaspoon slices of stick butter (use the guide on the wrapper to help you) or use whipped butter to your liking or taste

1 cup of frozen cut carrots (you can also use canned or fresh carrots, if fresh cut into very small pieces)

1 cup of frozen or canned peas

1 cup of frozen potatoes or fresh potatoes (cut into very small pieces if using fresh potatoes)

Use either milk, half & half, or light cream and fill to the top of the soup can (do not use water because it will lose the creamy smooth texture)

1) Add all of the chicken pieces in the crockpot

2) Add the butter, salt, pepper, onion, and garlic powder

3) Set the crockpot on high for 50 minutes (use a kitchen timer, cellphone, or if you have an Alexa devise)

4) After the chicken is cooking for 50 minutes, turn all of the pieces gently

5) Add all veggies at the same time unless you are using fresh potatoes (if using fresh potatoes add in after 30-minutes of when you put the raw chicken into the crockpot

6) Add in your choice of liquid (milk, half & half, or light cream) and stir gently and carefully

7) After you add the veggies and liquid in the crockpot switch the setting to low and continue to cook until chicken is almost flaky and veggies are soft

Please note: The complete cooking time will vary on your crockpot but it should be cooked within 2.5 hours or a little longer. ENJOY this one dish meal and it is great the next day for leftovers!


Whole Chicken with Marsala Wine, Peas, and Fresh Carrots

1 small roaster chicken around 4 to 5 pounds (if frozen you need to fully defrost it)

3 to 4 celery sticks cleaned and cut into very small pieces

1 small onion cut/diced into very small pieces

2 cups of fresh carrots cut into very small pieces (or you can use frozen carrots)

1 or 2 small cloves of garlic (or you can use small teaspoon of minced garlic in a jar if you prefer)

Sage (use ground Sage powder to just lightly sprinkle on the top of the chicken)

Rosemary (use ground Rosemary and just lightly sprinkle on top of the chicken, don’t use too much)

Olive Oil (just a small amount in the bottom of the crockpot)

1 cup of Marsala Wine

Salt and Pepper to your taste

1. Line the bottom of crockpot with the Olive Oil (don’t use too much just about 2 tablespoons)

2. Add in the fresh diced onion, celery, and garlic to the bottom of the crockpot (if using garlic cloves keep them whole)

3. Place the fully cleaned and dried whole chicken on top of the cut ingredients

4. Sprinkle the powered dried ingredients on top of the chicken

5. Set the crockpot on high for 90-minutes (use a kitchen timer, cellphone, or if you have an Alexa devise)

6. After the 90-minutes add in the 1 cup of Marsala Wine and drizzle slowly on top of the chicken

7. Continue to cook for another estimated 2.5-hours on high or possibly a little longer

You can serve this dish with mashed potatoes, baked sweet potatoes, or another vegetable i.e., green beans

Please note: The complete cooking time will vary on your crockpot but it should be cooked within 4-hours or a little longer. Please keep on checking the chicken until it is completed done – NO PINK INSIDE

ENJOY this meal and it is great the next day for leftovers!

Important: Always unplug your crockpot when not in use
