03/08/2021 “Quick and Easy Lunch and Treats" By Kaylee McGrath

I wanted to share some delicious lunch and treats I can do on my own…. and you can too! Having various learning disabilities, it is difficult sometimes for me to follow directions and measure ingredients from recipes. These two recipes I’m sharing this week are extremely easy with no measuring involved and easy to make. I’ve also realized that researching on the internet and trying to come up with some of my own ideas is also a great way to relax, de-stress, and keep my mind active. The recipes I’m sharing this week will be fantastic when COVID-19 restrictions are eased and everyone can start inviting friends over for lunch or a snack. Trust me they are GREAT and very EASY to prepare!


Easy and Cheesy Quesadillas (no measuring cups or spoons, no stove, no pan, or oven needed)

1 large tortilla (and place it on a paper towel)

1 large handful of shredded cheddar or mixed Mexican blend of shredded cheese

Spread the cheese evenly on just one-half side

Fold tortilla in half

Place on a microwave safe plate

Place in microwave for 20 to 25 seconds until hot and the cheese is melted

Take out of the microwave and be careful not to burn your fingers when you take it off the paper towel

Place back on the plate and cut in three pieces (like a pizza). Best to use a pizza cutter

Variations – add lunch meat of ham, turkey, pre-cooked thin sliced chicken breast, or to be healthy some precooked veggies

Optional, serve with sour cream on the side and/or salsa

Great with a cold glass of ice tea or milk (soda if you like it)


Easy “Almost Chocolate Croissants” (only if you know how to use an oven, you cannot use a microwave)

1 package of Pillsbury Crescent Rolls (original or butter). You must follow the directions on the package

Chocolate baking chips (your choice of milk, semi-sweet, dark chocolate, or use a combination of all three)

1 cookie sheet

Open up the package of crescent rolls and one by one pull apart VERY CAREFULLY not to tear the triangle shape

One by one, place the individual triangle pastry and place a handful of the chocolate baking chips

Spread the chocolate chips evenly and then start to roll them up into the crescent shape as per the directions

Bake in oven as per the instructions and golden in color

When done be CAREFUL and use a good pair of oven mitts to take them out of the oven and use a spatula to remove and place them on a plate

Wait at least 2-minutes to eat them warm (if too hot you can burn your mouth)

Enjoy with a cold glass of milk, coffee or tea

Variations – (Cream Cheese and Fresh Fruit “Almost Croissants or Danish)

Block style (softened) cream cheese (not whipped) slice a medium piece (around 1-inch) and place on the unbaked crescent roll pastry

Strawberries – wash, dry, and slice in very thin small pieces (don’t over stuff)

Place on top of the cream cheese, roll up as per instructions

Also great with Blueberries, raspberries, or blackberries – wash, dry, and place on top of cream cheese and unbaked crescent roll pastry

Follow the same directions as above and the package directions
