As a follow up to last week’s Summer Fun Meals, listed below is another recipe to make for yourself, family, or friends for a wonderful get together! This meal is healthy and the Kale adds wonderful needed vitamins. Feel free to leave a comment or message me anytime.
Grilled Chicken Kebabs with Kale & Romaine Lime Caesar Salad (serves 3 to 4 people)
Ingredients:
2lbs chicken breasts boneless, skinless
¼ cup olive oil
2 tbsp. lemon juice
4 garlic cloves finely chopped/crushed
½ tsp sweet paprika
2 tsp dried oregano
1 tsp rosemary finely chopped
½ tsp pepper
1 tsp salt
For the skewers:
1 red onion sliced into 1-inch chunks
Instructions:
Slice the chicken into bite-sized chunks, approximately 2-inch in size
Mix all the marinade ingredients together and pour over the chicken.
Toss to coat the chicken in the marinade then cover and marinade for at least 30 minutes but up to 24 hours in the fridge.
Soak bamboo skewers in hot water for 30 minutes or alternatively use metal skewers.
Thread marinated chicken and red onion onto skewers then brush with the remaining marinade.
Cook on a hot grill or in a griddle pan on the stove for 2-3 minutes per side until the chicken is golden brown and cooked through, approximately 10 minutes in total.
Remove from the heat and allow to rest for 5 minutes before serving.
Kale & Romaine Lime Caesar Salad Ingredients:
8 cup chopped fresh kale
8 cup chopped Romaine lettuce
4 cup croutons (*I just toasted some French bread and crumbled it afterwards, see instructions below)
1 1/2 cup grated Parmesan cheese
2 batch Lime Caesar Dressing, below
optional: 1 cup halved cherry or grape tomatoes
Lime Caesar Dressing Ingredients:
1 cup plain Greek yogurt
1 cup freshly-grated Parmesan cheese
6–8 tablespoons fresh lime juice
2 tablespoon extra-virgin olive oil
2–4 teaspoons anchovy paste, to taste
4 teaspoon Worcestershire sauce
2 clove garlic, pressed or finely minced
2 teaspoon Dijon mustard
1/2 teaspoon sea salt
pinch of black pepper
6–8 tablespoons milk
Instructions:
To Make the Kale Lime Caesar Salad:
Add the kale, Romaine, croutons, Parmesan, dressing, and tomatoes (if using) to a large bowl. Toss until combined.
Serve immediately.
To Make the Lime Caesar Dressing:
Add all ingredients except milk to a small mixing bowl, and whisk together until combined and smooth. Whisk in a tablespoon of milk at a time until the dressing reaches your desired consistency.
