I wanted to share this quickly put together dish that my mother made during Christmas week. So easy, tasty, and delicious! I had it as a leftover for lunch the next day. This is a one dish meal, no need to serve anything else with it Enjoy and you’re welcome!
Oven Baked Chicken Breasts with Vegetables
Yields 3 to 4 servings
Ingredients
4 medium boneless and skinless chicken breasts
1 large green pepper
1 large red pepper
2 large white or yellow potatoes
4 medium or large carrots
1 large onion
2 large garlic cloves
Salt and Pepper to taste
Poultry seasoning to taste
1 tablespoon of dried parsley
¼ cup of Marsala Wine
½ cup of olive oil
Directions:
1. Preheat oven to 350
2. Clean, dry, and cut/trim chicken breasts into medium pieces
3. Clean, dry, and cut red and green peppers, small to medium pieces
4. Clean, dry, and cut potatoes to small cubes/wedges
5. Clean, dry, and cut carrots to medium pieces
6. Peel and cut/dice onions
7. Dice/mince garlic cloves
8. Use half of the olive oil and spread on the bottom of the baking pan (big enough for all ingredients and to stir later in the baking process)
9. Add chicken, all veggies, onions, and garlic
10. Sprinkle all dry seasonings on top of all ingredients
11. Stir all ingredients until coated evenly
12. Sprinkle the rest of the olive oil and repeat stirring
13. Bake for 30 minutes and then stir again
14. Add the Marsala Wine after the 30 minutes and you have stirred the chicken and veggies again
15. Bake for an additional 10 to 15 minutes until all is thoroughly cooked
16. Take out of the oven and serve immediately
Dessert Suggestions: Brownies or chocolate chip cookies with a glass of cold milk
