03/06/2023 Easy and delicious “Chicken Champagne” By Kaylee McGrath

I’ve made this version of this recipe with my mom and it is so easy and delicious. Perfect to make, serve anytime, and especially for guests for a small dinner party. This recipe will be a keeper for years to come. Enjoy!


Chicken Champagne

Yields: Four (4) servings

Ingredients

4 skinless, boneless chicken breast halves

¼ cup all-purpose flour for dusting

1 teaspoon salt

1 teaspoon ground black pepper

2 tablespoons olive oil

2 ½ cups fresh sliced mushrooms

2 cups heavy cream (2 ½ cups if serving with pasta or rice, please see below)

1 cup champagne (1 ½ cups if serving with pasta or rice, please see below)


Directions

1. Lightly dust chicken breasts with flour and a little salt and pepper

2. In a large skillet, lightly brown chicken breasts to a nice golden brown in olive oil. Once browned on both sides, add mushrooms and champagne

3. Cook over medium heat, champagne should boil a little, for approximately 1/2 hour

4. When chicken is tender, transfer chicken to a platter

5. Pour cream into skillet and simmer about 5 minutes, until slightly thickened

6. Pour sauce over chicken breasts and serve with either Fettuccini pasta or rice (white or brown)


Optional Side Dishes: Buttered Green beans and mashed potatoes
