For my final Summer Fun Meals for the month of July, I took the typical teatime cucumber sandwich to another level to meet my tastes. Also, try this easy California Roll Wrap. I love California rolls that I order at Japanese sushi restaurants and love this easy wrap that I can prepare at home, anytime. These sandwiches/wraps are great for a summer lunch or a cold dinner to serve for a get together with friends and family on a hot day, or evening. Mint-Cucumber Tomato Sandwiches
Ingredients (makes 4 sandwiches)
3 tablespoons butter, softened
8 slices sourdough bread
1 large cucumber, thinly sliced
2 medium tomatoes, thinly sliced
1/4 teaspoon salt
1/8 teaspoon pepper
4 mint leaves cut in half
Directions
1. Spread butter over 4 slices of bread
2. Layer with cucumber and tomatoes; sprinkle with salt, pepper, and add mint leaves
3. Top with remaining bread. If desired, cut each sandwich into quarters
California Roll Wraps
Ingredients (makes 6 wraps)
1/2 cup wasabi mayonnaise
6 whole wheat tortillas (8 inches)
2 packages (8 ounces each) imitation crabmeat
1 medium ripe avocado, peeled and thinly sliced
1-1/2 cups julienned peeled jicama
1 medium sweet red pepper, julienned
1 small cucumber, seeded and julienned
3/4 cup bean sprouts
Directions
1. Divide the wasabi mayonnaise evenly among the 6 tortillas and spread to within 1/2 inch of edges
2. Layer with crabmeat, avocado, jicama, red pepper, cucumber and bean sprouts
3. Roll up tightly
Alternate Suggestions and Help:
If you can't find wasabi mayo, or don't like the spicy kick, use regular mayo instead. This sandwich lends itself to many flavor options. Toss in your favorite raw veggies, substitute smoked salmon or tuna for the crab and use half a pita instead of the tortilla. If you are making this ahead of time, toss avocado slices with a splash of rice wine vinegar or lemon juice to keep them from turning brown.
