Brown Sugar Salmon with Strawberries
Ingredients (4 servings)
1/3 cup packed brown sugar
1 tablespoon canola oil
1 teaspoon ground mustard
1 teaspoon ground allspice
1/2 teaspoon salt
4 salmon fillets (5 ounces each)
For Relish:
1 tablespoon minced fresh mint
1 tablespoon canola oil
1 tablespoon lemon juice
2 teaspoons grated lemon zest
1/8 teaspoon sugar
1 cup finely chopped fresh strawberries
1 small cucumber, finely chopped
Directions
1. In a small bowl, mix the first five ingredients; rub over flesh side of salmon. Refrigerate, covered, 1 hour
2. For relish, in another bowl, mix mint, oil, lemon juice, lemon peel and sugar. Add strawberries and cucumber; toss to coat
3. Lightly oil grill rack. Place salmon on grill rack, skin side down. Grill, covered, over medium heat 8-10 minutes or until fish flakes easily with a fork. Serve with relish

Quick and Easy Grilled Yellow and Green Zucchini
Ingredients and Directions:
1 medium yellow zucchini quartered and cut into wedges
1 medium green zucchini quartered and cut into wedges
In a bowl add ½ cup of olive oil and add in zucchini, lightly toss
Sprinkle salt, pepper, onion powder, garlic powder, and dried basil to taste
Toss again until all oil and ingredients are covering the zucchini
Grill until lightly golden brown and serve immediately
Suggestion for Dessert:
Frozen Chocolate Banana Treats (makes 1.5 dozen)
3 medium bananas
1 cup dark chocolate chips
2 teaspoons shortening
Optional prepackaged toppings: Chopped peanuts, toasted sweetened shredded coconut, and colored sprinkles
Directions
1. Cut each banana crosswise into 6 pieces (about 1 in. thick). Insert a toothpick into each piece and transfer to a waxed paper-lined baking sheet
2. Freeze until completely firm, about 1 hour
3. In a microwave, melt chocolate and shortening; stir until smooth
4. Dip banana pieces in chocolate mixture; allow excess to drip off
5. Dip in toppings as desired and return to baking sheet
6. Freeze at least 30 minutes before serving
