08/23/2021 – Easy Grilled Salmon and Avocado Salad – By Kaylee McGrath

With summer coming to a close soon, I wanted to share a delicious recipe I found on the internet, and with some help, I made some slight changes to it to make it my own version. The reason why this recipe is good for you is because both salmon and avocados contain omega-3 fatty acids which is typically found in plants. This particular omega-3 fatty acid is called ALA, and when paired together, not only makes for a delicious meal, but also creates a strong amount of healthy fats that is very good for everyone. You can serve this healthy salad dish for either a special lunch with friends or for a summer dinner.


Ingredients:

2 lbs salmon

1 tbs olive oil

1 tsp salt

1 tsp chili powder

1 tsp paprika powder

1 tsp onion powder

1/2 teaspoon garlic powder

1 tsp black pepper

Avocado salsa ingredients:

2 avocados chopped

1 Roma tomato chopped or use grape tomatoes cut in half (15)

½ small red onion chopped

1/2 cup corn

1 celery stick cut/diced

1 carrot cut/diced

Juice from 2 limes

2 tbs finely chopped cilantro

9 or 10 large romaine lettuce leaves (broken in pieces)

dash of salt & pepper


Instructions:

1. In a small mixing bowl combine salt, chili powder, paprika, onion powder, garlic powder and black pepper.

2. Rub the salmon fillets with the olive oil and rub with the dried spice mix.

3. Grill the salmon on medium heat for about 5 -7 minutes or until desired doneness.

4. Mix the avocado, tomato’s, red onion, celery, carrot, chopped cilantro, salt & pepper, and juice from the limes in a small mixing bowl.

5. Top the salmon with the avocado salsa.


Serves up to 4 people.

Serve with your choice of a cold beverage.

Recommended dessert: Key lime Pie or Vanilla Ice Cream with your choice of toppings
